Baked Gingerbread Oatmeal Pie

The holidays are here and this is what we’re having. I revamped by super popular Baked Peanut Butter and Banana Pie recipe to make it work for a gingerbread one and I’m so happy with the results. It’s spicy, slightly sweet, warming, and fudgy (which is something that just feels decadent, doesn’t it?)

This recipe is made entirely in a blender, which is a pretty sweet deal for clean-up when it seems like every other dish in the house is being used up by all the other delicious things being made this week.

It can also be made the night before, placed in the fridge uncooked and covered, then baked in the morning so you can wake the whole house up with the smells of gingerbread rather than the jarring sound of a blender.

Baked Gingerbread Oatmeal Pie Serves 4

3 ripe bananas
1/4 cup molasses
1 thumb-end-sized chunk of ginger
1 tbsp cinnamon
1/2 tsp fresh grated nutmeg
1/4 tsp ground all-spice
1/4 tsp ground gloves
1 tsp vanilla
2 eggs
2 tbsp flaxseeds
2 cups rolled oats
1 cup milk of choice

Directions

1. Preheat the oven to 350F.
2. Butter or oil a vessel. It really doesn’t matter what. I used a 9-inch glass pie dish.
3. Put everything into your blender and blend until smooth.
4. Pour into your prepared dish and bake for 40-50 minutes until lightly browned on the bottom and set.
5. Allow for it to cool for 10 minutes before cutting in.
6. Enjoy it on it’s own or drizzled with maple syrup or local honey while discussing what you can do to make a fellow human smile today.
