Baked Peanut Butter and Banana Oatmeal Pie

We’re huge peanut butter fans in this house. My husband and I joked that if our newest daughter was allergic to nuts, we’d have to give her back.

There’s a grain of truth behind every joke.

But luckily we’re clear of allergies (for now) so peanut butter (and all nuts) find their way into everything.

Like this baked peanut butter and banana oatmeal. All the flavours of your childhood in a warm baked pie-ish thing. It’s dense and fudgy and the best thing to warm you up on these endlessly cold mornings. (Hurry up Spring!)

I have already shared a recipe for a lemon berry baked oatmeal from last spring here, but admittedly, it does take some time to assemble (but it’s SO worth it!). This recipe is done completely in your high-powered blender, making it a 5-minute prepper.

Baked Peanut Butter and Banana Oatmeal Pie Serves 4

3 ripe bananas
1/2 cup natural peanut butter
1 tsp cinnamon
1 tsp vanilla
2 eggs
2 tbsps flaxseeds
2 cups rolled oats
1 cup milk of choice

Directions

1. Preheat the oven to 350F.
2. Butter or oil a vessel. It really doesn’t matter what. I used a 9-inch glass pie dish.
3. Put everything into your blender and blend until smooth.
4. Pour into your prepared dish and bake for 40-50 minutes until lightly browned on the bottom and set.
5. Allow for it to cool for 10 minutes before cutting in.
6. Enjoy it on it’s own or drizzled with maple syrup or local honey while discussing which is the silliest animal: ducks or chickens.
